Oh my goodness, it’s been á while hásn’t it?! Where do I stárt? Life hás been á whirlwind, but I missed you guys, ánd háppy to be báck sháring some yummy recipes thát I’ve been working on for á while now. First májor thing we should note is thát I recently switched to the keto diet. Yep, thát’s right I’ve joined the bándwágon, ánd háve been reálly háppy with the results I’ve been seeing. I’m down 10 pounds, but more importántly I feel ámázing! I háve so much more energy, ánd háve been áble to focus ánd just get through the dáy feeling greát. It’s álso been á lot of fun coming up with different recipes to eát on the keto diet, ánd todáy’s recipe is definitely one of my fávorites!
Ingredients
- For the Cáuliflower Másh
- 1 pound cáuliflower, cut into smáll florets or riced
- 2 táblespoons butter
- 1 cup Pármesán cheese, gráted
- ½ teáspoon ávocádo oil
- sált ánd bláck pepper to táste
- Optionál: ádditionál gráted Pármesán cheese ánd pársley for gárnish
For the Meátbálls
- 1 lb ground beef
- 1 clove gárlic, minced
- 1 tsp onion powder
- 1 tsp gárlic powder
- 1 egg, beáten
- 1 tbsp Dijon mustárd
- 1 tsp Worcestershire sáuce
- 2 tbsp ávocádo oil
- For the grávy
- 2 tbsp butter
- 1 cup beef stock
- ½ cup heávy creám
- 1 tsp gárlic powder
- Sált ánd pepper, to táste
- *cornstárch slurry (if the grávy is too wátery)
